Main Entrée- Carne Guisada
Beef- try to do ½ to ¾ a pound per person you are feeding, at fire station typically 3 pounds is enough
Salt& Pepper
Garlic Powder
4 Roma Tomatoes
4 Jalapenos
2 Serrano Peppers
1 Bunch of Cilantros
1 Onion
Vegetable Oil
All purpose Flour
Can of tomato sauce
Can of tomato sauce
1) Start by dicing the beef into one inch pieces, try to keep the sizes uniform, it will help in the cooking process.
2) Hot Sauce-Place tomatoes, half onion sliced, half of the cilantro, and serranos in a pot and bring them to boil and let them boil till the skins begin to fall of the tomatoes.
a) Blend all the ingredients together, set aside for later on
b) Make sure to save the water in which you boiled the ingredients
3) Begin to cook the meat in large pot, Season with Salt, pepper, and garlic powder
a) Cover and let simmer to tenderize
b) Once most of the water has evaporated, add vegetable oil (Depending on how much oil the meat has produced) to fry up the meat
c) Add one table spoon of flour to begin to make a “Gravy” in the pot with meat, This can be done easier if you move the meat to the sides of pot and have the oil in the middle
d) Once the “gravy is produced, stir meat into it as well
e) Begin to add left over water from the hot sauce till it has the consistency of a thick gravy
4) Add the hot sauce and tomato sauce,
a) Season, most like likely will need salt
b) Add half of chopped cilantro
c) If the Carne Guisada is too runny Microwave oil and flour and add it to, and stir, let cook
d) If the Carne Guisada is too thick add left over water from the hot sauce
e) Let simmer on low heat for 15 minutes
First side- Chorizo/Refried Beans
Package of Chorizo
2 Cans of refried beans
1) Fry up the Chorizo
2) Add cans of refried beans
3) Let simmer on low heat
4) Serve when hot
Second side- Uncle Jess’s South Side Rice
2 cups of long grain rice
4 cups of water
